So will shopping at ALIDI on Sunday I saw gallon cartons of vanilla unsweetened coconut milk for cheap; so I bought one. Then after it got home and I opened I realized that while it’s good there’s no way I’ll finish off the entire gallon by myself before it spoils. So what can I make with a gallon of coconut milk?

What would you do with a gallon of cow’s milk, and can coconut milk be used the same way?

(Need answer fast; I’m going to Aldi’s tomorrow.)

Hmmm…I’ve never used that stuff (just coconut cream and coconut milk that comes in cans which I believe is much, much heavier and caloric than what you got), but I would probably experiment with poaching shrimp in it for one use. I know you say it’s vanilla flavored, but unsweetened, right (so I assume no sugar substitute or anything)? Vanilla and shrimp pair together pretty well, so I’d give that a try, probably with a bit of onions/shallots/garlic, maybe some chiles, salt, pepper, etc., that sort of thing.

Out of curiosity, I just googled the terms and [found this recipe](http://www.food.com/recipe/tahitian-shrimp-in-coconut-vanilla-sauce-456175). It’s a little different than what I had in mind, but at least shows I’m not completely crazy for thinking it would work.

You could make a buttload of coconut sorbet. Or curry and then freeze it. Or both.

1. Buy some limes.
2. Put the lime in the cocoanut.
3. Drink it all up.

Or… get some pineapple juice and make Piña Coladas! (You can make them non-alcoholic, too.)

Enough beef **rendang** to feed a Malaysian army! (Look it up. Slow simmered in coconut milk with a tasty brown mix of spices – not very spicy, but flavorful, and some of the spices are those found in a typical curry, while others are not. If done right, the beef will melt in your mouth, and you won’t really notice much coconut flavor per se.)

Anybody ever really tried that recipe to see if it will give you a bellyache, or was it just more of Harry Nilsson’s musical ingenious?

I always heard it was just a euphemism for a drink, lime + coconut milk/juice + rum. He didn’t say rum, but by the other ingredients it was obvious to listeners what he was referring to. He’s calling the dr cuz he has a hangover, etc.

I had a friend go to Hawaii (not sure, might have been somewhere else), and he went to a stand where they would crack open a fresh coconut, cut the top off, pour cold rum into it and hand it to you. Made me think of the song.

It makes a GREAT (if somewhat fattening) sauce with meat, especially with nuts (you can just mix in some peanut butter) or curry. Use it as the liquid instead of wine or broth in a slow-cooked braise, or just cook up some chicken and make a quick sauce. Serve over rice.

Or put it in a blender with some sweetened condensed milk and a few ice cubes for a refreshing and tasty (and not all that healthy) drink.

A lot of people swear by anything coconut for their beauty regimen. It’s apparently a very effective natural moisturizer.
