Noma cookbook black garlic. This requires a commitment, basically have a dedicated slow cooker for several months fermenting in heat. Have not tried this.
As I mentioned in the buttermilk thread, I recall a Gilroy Garlic Festival vendor selling buttermilk-garlic ice cream. But they’re funny with that stuff there.
