OK, we have now picked the tomatoes, and I swear we literally have like 30 lbs. of them! All you folks who have suggested general ideas, do you have any specific recipes you like?

If you put them in a paper bags they should ripen fast . I vote pickle them !
This is my first experiment, with extra green onions, golden raisins, a bit of habanero, and fresh ginger instead of ground. There’s a 6 qt. Crockpot full of it just starting to cook - wish me luck!
We just pulled the first salsa recipe we could find off the internet. I think this is the one we used. The only changes we made are that we added some tomato paste to give the flavor a little more depth and we use a meat grinder so we can make it really fast.
The chutney looks great
That happened to us a few years ago, actually. One November night (we’re in Texas), we were supposed to get a freeze, so my wife and I went out and raided the unripe tomatoes- we filled every bowl, colander and box we had available.
They eventually ripened and were very good, even though it took weeks. I think we had fresh, garden-grown marinara sauce not long before Christmas!
You have peaked my interest. I have never heard of this but am willing to try it.
