What vegetables are good in chili?

Sadly, it is the sheer volume of chili cookoffs around here that inspired the farce that is Spamarama. And, even more sadly, yes, spam is a staple ingredient of the Spamarama chili cook-off competition.

Lo, did Satan lie with the animals, and they were fertile. When the fullness of spring came, the animals did bear the fruit of Satan’s loins, and it was Spam.

This did come up during our divorce procedings.

We use celery in our chili. Gives it a little crunch.

I usually throw two or three kinds of roasted peppers (a jalepeno* or two, a pablano or anaheim or two, roasted in the oven and peeled) a can of corn, a can each of black, red and kidney beans, four cans of tomatoes a green bell pepper, a red bell pepper and a large onion into my chili. Depending on what kind of meat is cheap, I’ll make it with ground beef, ground turkey, beef roast or pork roast.

(*I can’t find how to make a tilde, at least I don’t pronouce is jal-eh-peen-o)
