# What's For Dinner Tonight: Episode 2021 – A New Hope

Tuna croquettes, leftover rice pilaf, peaches from the farmer’s market, more blueberries from the garden and some cherries that were on sale from the grocery store. For dessert, the last piece of chocolate peanut butter cake and some port.

Chicken bites seasoned with Arizona Dreaming from Penzeys (we got a free sample). Roasted potatoes and carrots. The last of our garden strawberries and blueberries from the grocery store, which turned out to be really good, and they were on sale!

My gf was in the mood for Chinese, so I offered to drive and get our dinner. She said she’d rather go because when I go the owner always makes the Mapo tofu way too hot. I had talked with him about peppers and heat once and he told me he had “special peppers and spices” he used for his own food.

So she went to the restaurant. Turns out he recognized her. When he handed over the food, he said, “tell husband I made it the way we like it”. It was fantastic. My gf stuck with the Singapore chow mei fun.

I made beef tips in gravy, cooked slow in the oven for 3 hours then served over mashed potatoes. I made the mashed potatoes with roughly equal amounts of melted butter, softened cream cheese, and Greek yogurt. A delicious meal with no leftovers. Grey Goose on the rocks to drink, then an espresso for dessert.

A dish I call Eyetalian Saute. Onions, garlic, sun-dried tomatoes, zucchini, mushrooms, red bell pepper, green bell pepper, whatever other veggies you want to use up. Last night it was some carrots, peas, and broccoli. Toward the end I made some pasta (rotini) and added it.

Coleslaw as a side dish and iced vodka to drink.

I was out at an awards banquet last night, and it was a disappointing meal, all in all: mixed-greens salad with not enough dressing, too-rare steak and lukewarm salmon, with decent broccoli. A small but tasty slice of fudge cake with _creme fraiche_. Ice water and two glasses of very dry white wine. Coffee never offered, dammit.

I was delighted to discover yesterday that the grocery store that had really nice prepared dinners had not discontinued them after all, they had just moved them to a different section. So once again I was able to get their classic roast chicken breast stuffed with garlic sausage with a big side of fettuccine alfredo.

It’s too big a dinner for me so I split it up. Last night was, first, a dozen large black tiger shrimp with hot-horseradish infused cocktail sauce and a glass of Oyster Bay sauvignon blanc, then the stuffed chicken breast with half a baked potato, butter, sour cream, and finely chopped scallions.

Tonight will be the fettuccine alfredo half of the dinner with garlic broccoli and a side of Caesar salad, and a glass of cabernet.

Today was smorgasbord - or leftovers, whichever you want to call it. 🙂

One tuna croquette each, two party meatballs each (leftover from a potluck last night; those will make a reappearance in a day or two), and 3 chicken bites each with refried beans left over from enchilada night. Blueberries on the side.

Tonight I had practice right after work, so dinner was a frozen Trader Joe’s kung pao chicken kit dressed up with extra green onions, some extra peanuts and jalapenos from our garden.

Tomorrow the plan is breakfast for dinner. We’ll see if anything pops up to derail that plan, it’s supposed to be stormy here.

I wanted to try duplicating a restaurant’s seared tuna tacos. I messaged the owner (a friend of ours) and asked for guidance. Instead, he sent me his recipe he uses. I made his Asian slaw, his sauce, and his marinated then seared tuna. Turned out perfectly.

Meatball sandwiches made from the previously mentioned meatballs, on a toasted whole wheat bun. Roasted green beans and almonds, and honeycrisp apple slices. Cheap chardonnay to drink - chardonnay seems to go especially well with apples. I’m thinking of doing a charcuterie board with cheddar, chardonnay and apples as components when the weather gets hot and we don’t want to heat up the kitchen.

Herb-marinated mahimahi with macadamia nut buerre blanc and pineapple salsa, mixed grilled vegetables, furikake rice, and some kind of tropical drink that was basically a cosmo with extra lime and pineapple juice.

Korean Street Food food-truck, BoonSeek (one of our top 5 food trucks). We had Kim-Bob, Chi-Bob, and Bulgogi Mandoo. In English that’s a veggie roll, Korean fried chicken, and dumplings.

Dinner tonight was a few snack foods, but really an excuse for a couple of wine pairings. Once again, black tiger shrimp with homemade cocktail sauce featuring lots of hot horseradish, with Oyster Bay sauvignon blanc. Then baked sausage rolls with an impressively robust Ontario VQA red: Foreign Affair 2019 Conspiracy, a blend of cabernet franc and cabernet sauvignon – the former a classic cool-weather red that has always been the strong point of Ontario wineries, and the latter a varietal that a warmer climate and local selective breeding has turned into a world-class champ.

Tonight was extra thick pork chops fried in the skillet, then stuck in the oven for a bit, then finished in the same skillet with herbed butter and garlic; green beans sauteed in butter, salt, pepper and garlic; apples fried in cinnamon and butter; and Kings Hawaiian rolls.

Delicious - I swear the pork chops rivaled prime rib, and thankfully it was the only real meal I had today. A Real Ale Axis IPA for a beverage.

We had some beautiful tuna steaks. I got my grill grates as hot as I could, then shut off the gas. Seared the tuna just enough to get pretty grill marks, then served with a pineapple/habanero dipping sauce. Sides of riced cauliflower and coleslaw.

Heady Topper Beer for me and a dry white for her.

That sounds perfectly lovely – almost like sashimi! Tuna sushi – one of my faves, especially the _otoro_ cut from the fattiest part of bluefin tuna belly – can either be served raw or quickly seared with a blowtorch, similar to your quick-searing idea for tuna steak. Tuna is truly the king of seafood. 🙂
