I love pot pies, especially chicken ones, but unfortunately mr. romans does not, so I do not get one often. One of our local cafes sometimes has hassenpfeffer pies in the spring, but for reasons that have nothing to do with the deliciousness of those pies, I no longer frequent that establishment. I have to content myself with the occasional Stouffer’s chicken ones. Over here, we had our old standby racetrack casserole tonight and there’s enough chicken left over to do a basic chicken, mashed potato and greens dinner later in the week. Simple stuff is really satisfying sometimes. ---

Sunday was wood-fired pizza with bacon, onion, blue cheese, and balsamic glaze. Monday was red beans & rice with andouille sausage. Leftovers for tonight. They were delicious! ---

I made a porkbutt sous vide for pulled pork. My gf is in Florida with her mom for a mother/daughter vacation. She doesn’t want to eat pig because of humane reasons. I love pulled pork. So, I had some for dinner last night, put some in an omelet this morning, will have some for lunches today and tomorrow. ---

Tonight was smoked salmon pasta with spinach. It’s an old standby and I hadn’t made it in a while. There’s enough left over for round 2 in a few days. ---

Heh, worked late, and then exercised late. So, half a bag of chili-cheese Fritos and a couple of El Chingons. I’ll try to move up to a frozen dinner if I end up in the same situation in the future. ---

My gf is back from her mother/daughter trip, so I made a nice dinner. Shredded turkey in gravy served over homemade biscuits. A side I made up: cranberry sauce (from the turkey store) mixed together with Greek yogurt. I will do this again. Cheesecake for dessert with canned cherries overtop. Sauvignon Blanc to drink. ---

Pad thai with shrimp tonight - I arranged a dinner with a couple of old friends tonight and one of them suggested a Thai place we’d never been to before. The food is just as good as the much busier/noisier place we’d been to before, so I’m sure we’ll go there again sometime. ---

I was feeling exceptionally lazy and pitiful after doing my taxes, and had a large baked Yukon Gold potato. Perfectly creamy and buttery, even before I added butter. I have some leftover chili for later if I want a followup snack. ---

My gf bought lots of asparagus because it was perfect. She mad a huge pot of cream of asparagus soup. Meanwhile, I made a tofu curry. Totally didn’t “go together” but each course was very good. ---

I made tacos couple of nights ago because the Grandson was here. After reading a recipe here for Tamale Pie (which I’d never heard of before) I sort of made that tonight. Rehydrated the leftover taco mince with some hot beef stock and let it sit for a bit, made some cornbread batter, put the meat into a couple of ramekins, topped with the batter and put them into the air fryer for 20 minutes. Turned out perfect, bloody loved it, some steamed veg on the side as it’s a cool night but would love to have it with a garden salad. ---

Yesterday was a beautiful day, so my gf went out and picked up two marinated porterhouse steaks. They were freaking huge. I grilled them rare, made baked potatoes in the oven and a small side salad. The steaks were so big that each dog got a bit! ---

Surf & Turf! Chicken Piccata (the turf) and Crab Raviolis (the surf). For the sauce over the raviolis, I simmered leftover cream of asparagus soup for awhile until it had thickened. Served with Sauvignon Blanc. ---

Dinner out last night for my husband’s birthday. Went to a Greek place we both like. He got shrimp and scallops with orzo in a tomato cream sauce. I got chicken souvlaki with a tomato and cucumber salad and lemon potatoes. Had saganaki as an appetizer - my favorite thing there. We brought a piece of their cheesecake home to split later - it’s made with manouri cheese and it’s excellent - lighter than the typical cream cheese kind and just lightly sweet. ---

Had a little brainstorm yesterday and made homemade cream of tomato soup and cheese sandwiches. Super simple–big can of Muir Glen tomatoes, sauteed onion, basil, cream, salt, pepper and a little stock, blend with a stick blender. We left it a little chunky. Talk about different from Campbell’s!!! Good sourdough with cheddar, gruyere and bacon, fried with ghee. We have a winner!
