First, breaking the rules: My all-time favorite cheese is one of the family-farm handcrafted English cheddars. Only somewhat breaking the rules: My favorite would be the sharpest cheddar that the Mars Cheese Palace in Wisconsin has. Not breaking the rules: Extra Sharp Cheddar, first New York, then Wisconsin, then Vermont. ---

If I could I would always have in Imported Regiano Parmesan, always have it available for pasta or flavouring salads. It’s expensive but worth it. Gruyere, best melting cheese arround. English Farmhouse (or similar quality) Cheddar. One of these flavoured cheeses Cotswald, Red Dragon, Black Mountain, or Garlicy soft goat’s cheese. ---

Another Blue Castello fan. It’s insanely good. And it’s pretty cheep at Trader Joe’s. For sandwiches and quesadillas, I like organic baby swiss. Also available at TJ’s. ---

Well, right now I don’t eat much in the way of cheese at all. I’ve recently developed a mild intolerance to dairy, so I tend to eat very little of it. When I do eat cheese, my favourite is Feta (no particular brand). Mmm… Very nice with olives and sundried tomatoes. ---

Thanks **Rapunzel** for the reminder. Keen’s cheddar is heaven, but too expensive to qulify for the OP from here in California. Price in UK though is very reasonable. And welcome to the board 🙂 ---

_Top 5 Cheeses to take to desert island that has a fridge:_ 1. Brie or Camembert (both are fairly interchangeable though brie is less “stinky”) 2. Canadian Sharp White Cheddar 3. Buffalo (or just plain “fresh”) mozarella 4. Havarti 5. Cottage! ---

Cabot extra sharp cheddar. mmmm… Hard to find out here on the West coast though. I recently found Cabot’s Horseradish Cheddar. That’s a cheese that’s good for your sinuses! I also like the Black Diamond aged stuff you can get a Sam’s Club. yummy.
