I’d love to be the next Annie Liebovitz. Respected photographer of famous people. Get to travel and take awesome pictures of beautiful people. And since I’d be important, I probably wouldn’t take much BS in return. Make some money. Be allowed to be a bit weird (not creepy weird, but hey I’m an artist weird). People would look at my photos and say, “Wow. How did she do that?” etc. ---

Ideally I want to be some sort of Viking hero, but there doesn’t seem to be much demand for that sort of thing anymore, so I suppose I could be content with Beloved Unifier of Mankind, or Grand High Lord of Terra, or Imortal God-Emperor of Man, or something like that. ---

I don’t know really. Owning a bar, more like a chain of bars and restaurants, would be cool. But I have no qualifications/experience in that field. Though I’m working in a bar now, it’s at a level too low to be of any use in the future. I also want to apply [to this](http://www.hsbc.com/hsbc/graduates_im) after I get my MSc, so wish me luck. I’d also like to direct a film or five, be a super hero, get a PhD in economics, manage a for-profit micro-credits institution, bring peace to the Middle East, be a test driver for off-road vehicles, smuggle marijuana, get a degree in psychology, discover a cure for cancer, create tobacco that tastes as good as the real thing but does \*\*not \*\*cause cancer (I’d settle for either), be a professor in Middle Eastern modern history, and develop software… Ideally, on a part time basis. And win the lottery. Twice. ---

I can’t speak to the rest of your dream jobs, but if you really want to run bars/restaurants, the bottom is the best place to start, preferably barback/cook. This may be somewhat true of other businesses, but it is particularly important in restaurants that the management understand exactly how things get done at even the lowest level, and be able to perform any job required at a moment’s notice. I’ve worked for restaurants where the owners filled in as grillman, bartender, or fix-it-man when the regular guy didn’t show up/is too stoned to work/got stabbed by his girlfriend/is in jail for manslaughter; these guys ran the cleanest, most efficient, profitable shops I’ve ever seen. I’ve also worked in restaurants where the owners–professional ‘resturanteers’ with no practical food service experience–show up once or twice a week to “keep an eye on things”, and immediately disappear into the office to check the books (read: do a few lines of coke): I’ll leave it as an exercise to the reader’s imagination to discern how successful these establishments were. Running a bar or restaurant is very hard, risky, stressful work…but also very fulfilling for those who enjoy it. The bottom is the very best place to start from if that’s what you want to do.
