An old friend-with-benefits of mine who works at Taco Bell tells me that the only difference between the sauces at Taco Bell (mild, medium, fire, whatever) is the names on the packets. It’s all the same stuff. Or, at least, the ‘hottest’ two or three are the same. Something like that.
Anyway, that’s really weird (that you keep Taco Bell ‘hot sauce’ around, that is).
I’ve never really been a big fan of Tabasco sauce. Seems too…gringo.
I’ve never thought of it as “gringo” just cajun/creole, and too vinegar-y for my tastes. There are other vinegar-based hot sauces I prefer - Crystal’s for instance.
I am surprised at how many of you use multiple sauces. I must be lazy. I tried having multiple around - a sweet hot, a vinegar hot, a chipotle/smoky hot, etc. - but found I wasn’t switching around. I ended up sticking with Yucateco Green for flavorful hot, and sprinkling crushed red peppers to just add heat with minimal flavor modification…
It works on pizza, eggs, pasta and anything else. It is good in sandwiches like Spam, cheese whiz and Marie Sharp’s or peanut butter and Marie Sharp’s.
Trappey’s Chef Magic Jalapeño Sauce is my favorite. Perfect blend of hotness and flavor for just about anything. I’ve been known to sprinkle hot sauce on plain rye bread and eat that.
My favourites are probably the green ones based on Jalapenos, but I like a lot of different hot sauces and usually have two or three different bottles on the go at any one time.
I opened up my bottle of Dave’s Insanity Sauce today (Thanks Bippy) and my oh my, it’s potent! - just a speck about the size of a pinhead smeared onto a full-loaded forkfull of food produces a full-mouth ‘wow!’ - I dread to think what would happen it I splashed a load of it on a sandwich or something, like I generally do with other sauces. Oddly, for such a concentrated, hot sauce, it is also quite rich and flavoursome - like a sort of essence of harissa.
Nothing really weird about that. That’s good stuff, and the only way I can eat anything at Taco Bell is if I drown it in the “fire” sauce first. Of course, it’s not particularly hot, but it’s pretty tasty.
And I don’t get any more exotic than Tabasco. But I put that on everything I can, especially eggs & hash browns.
