For next season, remember that lemons will stay perfectly fresh on the tree for months, it is the best way to ‘store’ them. They don’t rot and fall off like, say, apples. We just go out and pick lemons off the tree all year as needed. That said, one of the easiest hot weather treats to make is lemon milk. Adapted from the Tassajara Recipe Book, which uses limes (which grow poorly here), pretty much you just squeeze a bunch of lemons, heat the juice, add sugar, add milk, and freeze in ice cube trays. ---

Put about a quarter cup of lemon juice into a ziploc bag; suck the air out (don’t overdo it unless you really like lemon juice) and close the bag. Lay the bag down flat in your freezer. Repeat until the stack is tippy. Once they’re frozen, you can have fresh-from-frozen lemon juice for recipes all year 'round; you only put a bit in each one because you usually only need a tablespoon or two, and you lay them flat so you can just crack off what you need. ---

Why did you pick them all? They hold on the tree very well. My tree has lots of lemons now, but I only pick what I need. They rarely go bad on the tree. Pick 'em and they’ll rot in your kitchen. ---

I used to have that problem when I lived in Southern California. I had at least 4 mature lemon trees that bore copious fruit year round. But I had no problem disposing of them, as the neighborhood kids would strip the trees and fill up shopping carts regularly as long as I let them. I think they sold them at the freeway entrances.
