Well, back to the OP, I don’t listen to a lot of classical music on headphones, but I’d assume that at least some recordings would be mixed to put violins on the left, cellos and bass on the right, and brass/wind in the middle/right. That’s where they sit on stage, after all, so that’s where you hear them at a live concert.
