And of course, the difference in the degree of grinding is rather extreme. There has always been an implicit understanding of what that means, and this ain’t it. If they want to specify on the label that what they call ‘ground beef’ includes or doesn’t include this stuff, that’s fine. Then I as a consumer can make informed choices. Otherwise, let 'em include it in hot dogs, bologna, and other products that say right there on the label that they include some of the more interesting animal bits. I have no problem with the awareness that the more interesting bits are part of what I eat - I love a good hot dog every now and then. But I want to make the choice of whether to eat those bits, and not have it foisted on me by a meat-packing plant.
