Ah, not to forget Sir Ian McKellen as Magneto in X-Men and X-2 (X-3 is not in production, says the IMDB).
And, memorably, as Richard III, in a stunning 1995 production that set Shakespeare’s tale in the 1930s, with the hunchback king becoming a sort of a fascist English king. Well worth your time to track down. Sir Ian’s performance is both believable and totally stunning. Highly recommended.
Ralph Fiennes. Wasn’t he the Nazi in Schindler’s List? And he makes a kick-ass Lord Voldemort in the upcoming Harry Potter and the Goblet of Fire. I’m sure he’s played other bad guys but I haven’t seen all his movies.

I submit that while he played the villian in Robin Hood, nothing about that movie was great.

No one has mentioned F. Murry Abraham??? You guys are slippin’. He played Omar Suarez in Scarface and Antonio Salieri in Amadeus. He also played a guy who supposedly killed a guy named Moe Zart in “Last Action Hero”.
More of a character actor, but I love seeing Danny Trejo in movies.

I have to add one more for Alan Rickman - he was just chilling as the Interrogator in Closet Land (a flim no-one seems to have seen or to remember).
I didn’t know about his VA work, or Legend. But you forgot him as Pennywise the Dancing Clown in It. And there is an argument to be made for his Long John Silver in Muppet Treasure Island.
Looking at Tim Curry’s iMDB listing, I see he did the voice of God in “Animated Stories from the Bible: Music Video”. There is just something deeply and terribly wrong about that. Also, he does a lot of work as a pirate.

Above Miss Mapp mentioned Louise Fletcher in One Flew Over the Cuckoo’s Nest and Deep Space 9.
Amrish Puri played the bad guy Mola Ram in Indiana Jones and the Temple of Doom as well as playing the bad guy in most of the 228 other movies he made in India.
He was also excellent in The Limey. Although he was the protagonist in that movie, one could regard him as being a sympathetic villian a la Kathy Bates as Delores Claiborne or Billy Bob Thornton in Sling Blade.
