I’d nominate Amber - 10 books (11 if you count the visual guide to Amber) and I think that even today there is a large following of Amberites.
(they did do a few comics based on it, no movies, and there is an official Tarot deck out there, and the RPG).

Well, two really, but no one really counts Shock Treatment.
And it was a play first, y’know. So really we have about 5-6 hours of material, before all the myriad soundracks and audience participation tracks, which are, ironically enough, considered “canon” by Kids These Days.
Definitely wins the level of hard core adoration:source material ratio, though.
Paranoia the RPG might be a contender as well.
How about something like John Doe on Sci-Fi, or Wonderfalls (does that count as Sci-Fi?)
How about the largest canon? My vote goes for Doctor Who, by far.
Ooh, good one. Some die hard fans only consider the first series to be “canon” and dismiss the Merlin Saga. (as for anything after that: John Betancourt who?)
