I myself have only eaten chicken eggs and probably one or two types of caviar.

Chicken (of course); fish (of several sorts) and either duck or goose, I can’t really remember - it was much the same, but “creamier”.

I’ve eaten chicken, duck, and quail eggs, as well as 3-4 types of caviar. On sushi, there’s _ikura_ (salmon roe), _tarako_ (flying fish roe), _masago_ (smelt roe); I’ll also throw in _uni_ (sea urchin gonads).

I think the all-time record is held by one Peter T. Hooper, but I don’t think he’s a member here.

I’m sadly lacking in egg variety experience.

I really don’t have much to add here, having eaten merely chicken, duck, salmon and sturgeon, but I have to say that this is the best thread idea I’ve seen in ages. I can’t wait to hear the winning total. 🙂

I did poach some fantastic eggs this morning, though. The clingfilm method rules, although it does feel faintly like cheating.

Edit: remembered cod roe.

It only qualifies as ‘eating’ if you swallow the gonads in question.

Chicken and four caviars – two of those in sushi (salmon and the tiny orange roe), plus sturgeon and black mullet.

In the U.S., black mullet was traditionally considered a “trash fish” (as in, good for only poor people to eat), but the whole fishery is highly prized in Japan (duh), where an additional premium is paid for the females with roe. In fact, the Japanese dibs on the U.S. catch can make it hard to locate black mullet for sale domestically now – especially the ones with roe. (In some years, my dad has had to make special arrangements with a fish merchant to hold one or two in reserve, to secure for Christmas dinner. Yes, Christmas! Not everyone has turkey or ham.) In Hawaiian/Japanese Hawaiian cuisine, the fish is steamed and served in a pool of soy sauce and sesame oil, with mounds of grated ginger and finely chopped scallions. The roe is of the tiny-egg type. When cooked, it has a bright mustardy color and a granular texture and mouth feel with a complex and most un-caviar-like taste (best compared, perhaps, to cheese, although that’s not really it at all). Being very firm and quite dry, it’s best eaten in small bites liberally dipped in the soy/sesame sauce. And you get a lot of it in a mature black mullet – two long, torpedo-shaped bladders’ [?] worth, each about ten inches long and maxing out at about 1 1/2 or 2 inches in diameter. That’s a lot of roe!

It’s a peculiar thing to be a maven of, but if my SDMB field of expertise turns out to be black mullet roe, then so be it. 😄
Re. other eggs, I’ve long wondered what Chinese fermented duck eggs must taste like, but I lack the nerve. Anybody?

If what you describe looks like a black hard-boiled egg, then would liken it to salty jello. Not bad.
