Why does bacon go bad so quickly?

My supermarket bacon doesn’t go bad quickly at all. But I re-wrap open bacon very well (at least 2 layers of plastic wrap with as little air as possible) and my fridge is kept at 38º.

Never heard that; it sounds like an old wives’ tale. I always cut mold off and use the rest. Your claim needs a valid cite, especially since I have never become sick from such action or known anyone who did.

Besides, even if your claim is true, you also need to prove that eating invisible mold in small quantities is harmful or the objection is only aesthetic, not medical. Don’t forget…Blu Cheese uses mold for flavor, so it can’t be all bad.

I think the wax coating idea predated shrinkwrap. Most of the cheese I buy at local Renard’s is shrinkwrapped, but some is in wax. Wax is a little harder to work with for the consumer, and modern shrinkwrap is very good and tight.

Cutting mold off hard cheeses is fine. You just don’t want to do with soft (like cream cheese or cottage cheese) because the mold isn’t contained in the same way. It’s impossible to know if you got it all.

FWIW, there are molds that are edible and molds that are not.

No, it can indeed kill you. It’s called food poisoning. My cousin’s wife is a doctor. She told my dad that when he insisted you can just cut mold off of anything – bread products are especially vulnerable.

I’ve always had a phobia about food poisoning.

If in doubt, throw it out.

I readily admit there are times that I’ve thrown out potentially good food. But I rather toss a few dollars away in food then get a expensive hospital bill.

I slipped up by not thinking to check the expiration date on the bacon. It’s one of those foods that usually gets cooked and eaten regularly. It doesn’t get an opportunity to spoil. I’ll be more careful from now on.

If you are buying bacon and leave it sitting in your fridge for months…you’re not doing bacon right.

Bacon is meant to be eaten.

It’s still cured, but not as heavily, and not dried at all. Part of that is because drying makes it weigh less (weight = $$$), and part is because traditionally cured bacon is salty as hell and typically requires a bit of par-boiling to draw out some of the salt (have made it from scratch actually.

Be that as it may, it’s still very salty, and gains a little extra shelf life relative to the same amount of uncured pork. According to eatbydate.com, fresh pork is only good for a day or two in the fridge past the sell-by date, while bacon is good for a week past the sell-by date.

But a month past the date? No wonder the OP got the shits.

Yeah, the OP should just buy the 1 pound packages. You know, the single serving size.

I grow my own milk at home. Over the years I’ve kind of created my own strain. I find it not unpleasant.

He’s being a bit of a zealot, but there is a real issue with food being thrown out unnecessarily. There is a lot of food wastage in this country. There are people who do make it a political issue, both pushing for education on how to know if food is bad–knowing the real signs of food going bad, and knowing the difference in best by, sell by, and expiration dates.

Others just push the idea that said food should be given to the less fortunate, and that laws should not punish people who go dumpster diving for such extreme wastage, like stores that get rid of food that’s past the sell by date but still not expired.

And, of course, there are those “bent and dent” stores that do try to make money off this stuff. My local one is run by Mennonites, who, like the Amish, put a lot of value into avoiding wastage. And it’s the type of business they can run the way they like.

Yeah, no. Dude said to wash off the green, sticky mold and eat the meat. This is very different from eating bacon a few days after its best-by date.

A bit of a zealot? Dude, the guy eats moldy food out of dumpsters, and admits he rarely washes his hands. He doesn’t seem to understand the concept of "food poisoning. Dude’s kitchen sounds like the Salmonella Buffet.

(The laws on dumpster diving are usually about liability. Blame it on too many law suits)
