Well, I think it’s mainly because they wanted to avoid the “Doctor Manhattan” look, and if you’re going to put any clothes on him, you might as well make him fully dressed. Walking around in a speedo would look kind of dumb.
I also think that it would look strange on a perhaps unconscious level for a humanoid without fur to be walking around naked in freezing temperatures. It doesn’t have to make sense.
Finally, the humans figured out they were weak to certain weaponry, so they needed armor to protect themselves. Arya’s move wouldn’t have worked if she didn’t find a weak joint in his armor.
The big question is how the armor was impervious to dragon fire. Was it just solidified magic or are there substances that can be used by Cersei and her pet alchemist? Either way they are a giant potential plot point - that will be totally ignored.

I don’t think it was the armor. I do think it was magical though, and you’re right I don’t think it will be explained.
Plus, I don’t think the NK is gonna look as Dany coming out of that naked.
