I’ve heard that a number of establishmets already do this, but they rip off the dancers in the process. A customer who charges $10 to his card gets ten scrips, but when the dancer cashes those ten scrips in at the end of the night, the management only pays them $8 or $9 for them. At least, so I’ve heard.

As for the “whole grocery store keeping the 2 cents” issue, I have a “take a penny, leave a penny” tray by my cash register (as do many (most?) other stores around here), and I almost never have to restock it. Sometimes customers toss dimes or quarters in it, and I replace them with an equivalent number of pennies.
