Why is bottled simple syrup so expensive?

I would say it’s actually not that expensive. You get exactly what you need for under $10. Unless you are tending bar, that bottle will probably last for years. It’s at the level where it’s just not worth thinking about.

Years? If you have some friends over for cocktails a 12 oz bottle of simple syrup would easily go in an evening. You’re looking at about 12 servings there. (Or fewer if you like your drinks particularly sweet.)

Don’t they all call for heat and some amount of agitation? Hard to get that sugar in solution just by dumping sugar in room temp tap water.

Apparently, according to Serious Eats, I’m wrong. Up to a 2:1 sugar:water solution of will dissolve fine without heat. You just need to wait about 45 minutes and shake/stir it midway.
