Why is duck uncommon in American cuisine?

I have eaten it a few times and I like it but I don’t go out of my way to buy it. It’s not on the menu of the local Chinese restaurant that I go to. Never had it growing up’ I assume Mom thought it was too greasy and Dad was a creature of habit. I was able to convince Mom to cook a goose for Christmas dinner in the early 1980s because of “A Christmas Carol”. She was reluctant but did it and afterwards remarked to Grandma that it wasn’t as greasy as she thought. But my younger sister objected strenuously “why can’t we have turkey like we always do at Christmas?” so that’s what we had. Never cook convince Mom to make lamb chops after a friend’s mother made them for us when I was 8.
