# Why is my Panettone not stale?

I bought a largish Panettone (Italian Christmas cake/ bread) in early December. Mrs hawthorne doesn’t like 'em, and since I found it a bit sweet for my tastes, it went unfinished.

I had some for breakfast the other day, and it’s still good. Why? It’s been stored in the plastic bag it came in, not frozen or in a sealed tin. Admittedly it was toasted, but it still seems pretty impressive.
