I prefer dark mustard, but really any mustard is acceptable. One big exception: honey mustard. Who came up with that shit?

Likewise. Different mustards for different kinds of foods: yellow for hot dogs and bologna sandwiches; dark for salami, roast beef, and non-hot dog-type sausages; and either kind for ham.
Also, does sweet-hot mustard fall under yellow or dark?

Dark. I think yellow mustard is too bland. My favorite mustard is spicy Southwest style.

Not long after we moved to the Bay Area I went to what passes for a deli around here and ordered pastrami. They came out with a yellow mustard. I asked for deli mustard, dark, and the waiter looked at me as if I were crazy.
I came very close to moving back to New Jersey.
Some things are barbaric.

Dark isn’t a real mustard category to me
Brown maybe, German, Whole seed, Dijon are.
So if the question is yellow or “other”, then other for me.
