I posted this on my Facebook, and one of my FBFs said she remembered her grandmother doing this when she was a kid, and she had totally forgotten about it - and could find the information useful right about now.

So far this year, I’ve made zucchini bread, air fryer zucchini fritters, stuffed zucchini, and a pasta sauce incorporating zucchini, peppers, and onions. I’m making the OP’s second recipe and serving it for dessert.
