Back when I was on the road for work 25-odd days a month, I always thought a farm-fresh restaurant located at rural exits (along side Rally’s, Subway, McDonalds, Hardee’s, etc) would be a nice thing to have. Have one or two signature items on the menu, but then everything else would be based on the local agriculture and season. I’d have shepherd’s pie and a cheeseburger as the signature items. The shepherd’s pie would come in a cup with various items of your choice inside the mashed potatoes. I’d call it “The Farm Stand” or some such name. Either that or I’d start a soul food/Thai fusion fast food joint and call it “Black-Thai Affair.” ---

Fresh vegetables and/or tofu, roasted with herbs or deep-fried in light tempura. A selection of sauces My killer Moroccan beans with rice Macaroni and cheese - baked in house Cheese Pizza by the slice. No other toppings. (WHY are there no drive-throughs offering this?) Coca cola soft drinks Fresh herbal teas over ice Large iced water or coffee free with order (no hot coffee) This is a fully vegetarian menu, and mostly vegan. There are gluten-free selections, but also things carnivores like. Everything can be made ahead, frozen, and either heated quickly or kept hot for long periods before serving. ---

French bread pizza I’m picturing a Subway-like setup; you start with a halved French bread, then you pick a white or red sauce, mozzarella cheese goes on, then you pick your toppings. Into the toaster for 30-60 seconds, wrap it up, would you like a drink and chips with that? ---

But, a bit more seriously (though I love schnitzels), I would take the idea of Chicago style Italian beefs and Philadelphia roast pork sandwiches and try to take them both national in a fast food restaurant. ---

I had an idea of a simple bar, that each day offered a simple menu. But a very, very limited choice. Cheap. Maybe an all you can eat sort of thing. Or 2 bucks for another plate/bowl. Each day something different. That’s it, other than that you could always get a simple salad or ham or turkey sandwich. Monday - Chili Tuesday - A great soup/bread Wednesday - Lasagna Thursday - Meatloaf - … Mix it up. A locals place. Sort of like that. I think that keeping the kitchen simple, you could make good food and a lot of one dish cheaper than trying offer a full menu. I think you would have much less waste, and would need less staff. Make money on beer. Make note, I’ve never worked in any service/restaurant industry. So I’m probably off my nut. ---

I mean, I have them when I’m in Maid-Rite land, but I just don’t get why they are a thing. Apparently, we had one here in Chicago for about a year within the last decade, but it didn’t last long.
