As a general purpose sidearm, I like the S&W Model 3. Although it is from towards the end of the time period specified, I’d like to have Winchester 1887 lever action shotgun available. A Winchester 1876 rifle seems a must have. I think I might also like one of the small-framed revolvers from Merwin & Hulbert as a back-up gun.
