Share your quick, easy, and delicious microwave meals

The rules: No baking, no flames, no pots or pans.

Place a flour tortilla on a plate.
Spoon on some Chi-Chi’s shredded chicken (or other pre-cooked meat of your choice) and distribute evenly.
Break up and add a few black olives.
Add sliced jalapenos to taste.
Cover with shredded cheese (I like the Safeway brand Mexican blend).
Another tortilla on top.
Nuke for 2 minutes, top with salsa and plain yogurt, and Bingo, you’ve got yourself a yummy and not-too-unhealthy chicken quesadilla!

Layer flour tortillas, cheese, meat and chili-style tomatoes in a round baking dish with a lid. Microwave until bubbling. Yum! Taco lasagna!

Nuke a big fat sweet potato for about 4 or 5 minutes, flip and repeat. Cut open and sprinkle with kosher salt and Frank’s chili-lime sauce.

If you really want to go all out, add diced onion or scallion and some grated smoked cheese. Very filling. Also portable; I sometimes carry a sweet potato around in my bag if there won’t be time to get lunch.

Scrambled eggs with cheese on an English Muffin.

Makes the muffin kinda gummy - I like it.

Take a fresh or defrosted salmon filet, and microwave till done. Season to taste: lemon juice, butter, garlic, whatever. Optional: marinate in soy sauce for one hour before cooking.
