Recipe Ideas? I have leftover baked fish.

I have quite a bit of leftover baked pollock fillets–probably 3-4 cups worth.
Other than reheating it, what can I do with it? I’m not very experienced with fish!

break it up a little and mix it with about an equal quantitiy of cold mashed potatoes, a little finely-chopped onion (or better still, snipped chives), plus your choice of herbs (fresh chopped parsley would be good), form it into flattish cakes, chill them for a while in the fridge, then fry them in very hot oil.

Alternatively, slice and gently sautee some leeks, place these in the bottom of an ovenproof dish, next, add a layer of fish, then grate some cheese over it, add a layer of thinly-sliced potatoes, pour over a bit of cream (maybe a cup), cover with a lid and bake in the oven until the potatoes are soft, then remove the lid and finish it under the grill.

Mix with raw egg, bread crumbs, chopped green onions, thyme, salt, pepper. Form into cakes. Roll in Panko bread crumbs, shaking off the excess. Fry in hot peanut oil until golden.
