What to do with leftover salmon?

I have about 0.5 lb of leftover cooked salmon that I want to use for dinner tonight.

Thoughts:
-a salmon chowder with corn and other veggies?
-some sort of salmon pasta? But what? (Also, peas are out, as mr hunter does not eat them.)
-salmon stir-fry?

Any other thoughts?

Salmon cakes. Prepare just as you would crab cakes.

I like salmon, mixed with some cooked diced potato, butter & dill, wrapped in a pastry crust and baked.

That’s my standard. Yumbly mumbly!

Throw it in a cream sauce, with a little onion and diced potato, maybe some thyme and red pepper flakes and garlic. Over the top of some pasta. Serve with a nice bread, maybe a como.

You’ve heard of tuna salad? Chicken salad?

Like that, only using salmon. Whatever recipe you like.

Make a white sauce, rich in butter, add dill and a little nutmeg, add in the salmon in pieces. Serve on pasta.

It’s great flaked and cooked into scrambled eggs for breakfast.

Salmon pot pie is also really good.

At one of my first jobs we used it in a wrap with sort of an Asian slaw.

Works well in salads with an acidic dressing.

And to carry on with what Broomstick said, you can use it in Tuna Noodle Casserole. Or stuff it into some manicotti or large pasta shells.

If you do make salmon cakes, save one for breakfast, and have it with a poached egg and hollandaise sauce.

I think you need more left over salmon.

You can’t ever have too much salmon, leftover or otherwise.

Ochazuke is great with salmon mixed in. All you really need to make it good is rice, green tea, and arare crackers if you can get 'em.

Thanks! Went with the salmon in cream sauce pasta, kind of a mix between 3:20 and chefguy, but I have definitely noted down all these suggestions… we have salmon a lot, because I love it :slight_smile: (That pastry crust thing sounds really delicious…)

Or perhaps some other anthropomorphic representations…
