I broiled some salmon last night with garlic, thyme, and lemon juice. It was really good- I love salmon, and anytime I make it, I purposely make too much because it makes the most wonderful leftover dishes.
Today, I made eggs benedict with using the salmon instead of canadian bacon. Other things I’ve done with leftover salmon are omelettes (with gruyere cheese), tossing it with pasta and a basil cream sauce, and salmon hoagies.
Leftover chicken gets made into burritos, and leftover shrimp gets made into fancy sandwiches.
I could use some other ideas of what to do with leftovers, especially vegetables (something besides soup). What do you do with your leftovers?
Leftover leg of lamb goes into shepherd’s pie. I roast the lamb rare or medium-rare, and make gravy with the drippings. I make mashed potatoes or colcannon to go with it. The next day I slice up the roast and run the slices through a meat grinder. Add a bag of frozen mixed vegetables, the remaining gravy, and salt and pepper to taste, mix together well, and top with the leftover potatoes in a 13"x9" baking dish. Bake in the oven until the ‘tips’ of the potatoes are brown.
I don’t know if this would be considered leftovers exactly, since I plan it out, but I like to throw about 4-6 boneless, skinless chicken breasts pieces in the crockpot, sprinkle with taco seasoning and some salsa, then cook all day. I shred up the chicken when it’s done, and use it for tacos that night. The next day, I take the remainder of the chicken, mix it with some pinto beans and some canned spicy diced tomatoes and use it as a filling in a pie crust. I just take one crust, layer the mixture on one half, then fold it over. I use an eggyolk wash and then bake it. I can also use some of the meat in chili.
I also do the same thing with chicken breasts, except use BBQ sauce. Then I use the meat for sandwiches, then BBQ chicken pizza.
I frequently cook meat in the crockpot then use leftover meat for other dishes.
The two things we have left over most often in large amounts is cooked poultry (either chicken or turkey) and cooked Cuban-style pork roast. With the poultry, I like to make tetrazzini, and with the pork, my husband makes delicious enchiladas (he’s doing that tonight, in fact, with the meat left over from Christmas Eve dinner).
