Mine would have to be the omelette I made tonight. I made crab cakes Saturday- big, wonderful chunks of crab, sour cream, garlic, grated cheese, bread crumbs, and a little bit of red pepper flakes. 4 of them, 2 each for Mr. Katie and me. I was feeling adventurous, so I topped them with hollandaise sauce. Mmmmm.
OK, I got cut off during that post… the rest of the story… I had one left over, and made an omelette out of it tonight. Crab and swiss cheese. Yum. What’s your best resurrection of leftovers?
I made a big pot of chili, then with the leftover chili, I made cornbread chili pie. Put chili in a 8x8 pyrex dish, put cheese on top, then a box of corn muffin mix (mixed, of course).
I had made a roast beef, and had tons left over (even a small roast beef is pretty big). So the next night we had philly steak sandwiches and then the night after that I cubed up what was left and made a beef stew. yum.
I made chicken fried steak out of prime rib. Up to that point, this had never been done before.
I always make a point of making stock with the remains of a roast chicken; the stock is great for making a really good risotto; I don’t have a recipe, but it usually includes onions(of course), red peppers, mushrooms and some pieces of leftover chicken, if there is any.
When ever we go out for steaks, if we have left overs we bring them home and the next morning make up omlets with freshly sauteed mushrooms and onions with just a hint of garlic.
Mmmmmm…Left over steak omlets…aaarrrggggg.
From the remnants of Christmas:
I had equal amounts of turkey, broccoli rice casserole, stuffing.
Rip apart turkey into manageable bite-sized chunks. Mix with broccoli/stuffing. Split evenly and put onto 2 tortilla wraps. Wrap them up, heat for 3 minutes and have the best darn holiday wraps ever.
No, with leftover turkey and stuffing you make Turkey Shepherd’s Pie –
Layer of stuffing on the bottom.
Layer of cut-up turkey mixed with leftover creamed onions (if any) or white sauce + mixed veggies
Layer of mashed potatoes
Put in the oven for 30-45 minutes.
(serve with leftover cranberry jelly, and leftover pie for dessert,)
i absolutely adore chicken leftover sandwiches with lashings of ketchup - simple but gorgeous.
Slightly off topic but…
Ramen noodles are great for leftovers. The other night I made 2 packages of chicken ramen noodles, mixed in the leftover roasted chichen and the leftover peas and onions, added some frozen shopeg sweet corn, couple shots of soy sauce.
Dinner for three! And Damn Good!
I made my first bubble-and-squeak the other day. Equal parts of leftover boiled potatoes and cabbage, pressed into a hot skillet with lots of melted butter, and mashed and fried until it gets crusty on the bottom. Give it a flip, and fry the top until it gets crusty, too. Heavenly.

I took leftover sloppy joe (I actually make my Sloppy Joes “Italian Flavored” rather than the usual spicy configuration) and mixed it with ricotta and used it to make canneloni. That was a good one! I was patting myself on the back over that for weeks.
I’ve made HOME-MADE macaroni and cheese casserole (1000 TIMES better than ANYTHING in a box!) several times.
The next day, cut the cold mac-n-cheese into squares. Dip in egg-batter and roll in breadcrumbs, then fry.
Serve with bleu cheese or ranch dressing for dipping.
Oh my God!..it’s FAB!
Yeah, it’s probably the MOST unhealthful thing one can eat. But MAN is it good!
when the rib roast was picked clean after X-mas, I boiled the leftover bones etc… and made beef stock. Cooked down some onions, added the stock and some brandy…mmm… homemade french onion soup!
Lobster omlette. Pretty much the same ingredients as your crab cakes omlette katie1341 minus the sour cream, add some fresh chopped parsley, served with President’s Choice Black Bean and Corn Salsa (mild). Yum!
BTW, that President’s Choice Salsa makes an excellent “secret” ingredient when making beef stew. Yum
