A tasting of mustards

I was recently given a selection of French mustards. With sausages on the menu tonight, I thought I’d try them and share my observations.

[ul][li]au Chardonnay - very bland. Seems like the wine neutralised the native flavour of the French mustard. Disappointing.[/li][li]aux Noix - nice, but simply tasted of mustard (but slightly different) rather then nuts. I wouldn’t have caught the slightly different taste if I hadn’t been looking for it. Meh.[/li][li]Hi, Opal.[/li][li]aux Cassis - tasted like English tard; no taste of blackberries. Meh.[/li][li]au Bleu - I forget what bleu means in this case, but there was a strong taste of blue cheese (probably the correct translation anyway) which complemented the mustard flavour very nicely. Delicious.[/li][li]aux Basilic - an indeterminate herby flavour. Disappointing.[/li][/ul]

So, two disappointments, two meh, and one stand-out.
