I know it can vary from institution to institution, but what could I expect for minimum requirements to teach a night class or two (business) on an adjunct basis? I thought an M. Ed. would be required, but a friend of mine says no - B. of S. in Management/Business Administration is enough.

At the small private liberal arts college I was associate prof. at, it was a requirement to have a masters to be an adjunct. State univerities may be different.
Several years ago I taught intro classes in newswriting and masscom; because I was adjunct and the classes were not “core curriculum”, I needed only “proven expertise in the field.” Since I was editor of the local newspaper, that wasn’t a problem.
I now teach English composition, but since that’s a core curriculum class in Colorado, I have to have at least 15 hours toward an MA and be continuously working toward finishing the degree (which I have and am doing.) I’m sure this varies from state to state; check your state’s office on higher education for state-owned small colleges. Private colleges will have their own criteria; check with the dean of faculty.

If you don’t mind me asking: how much time do you devote to each class, outside of the classroom?
A common cutoff is 18 graduate hours in the field you want to teach. For some types of accreditation, schools need to have all their courses taught by folks with this qualification, with an exception for graduate TA’s. I don’t know exactly which accreditation it is, sorry. Coursework in education, unless you are teaching education material, is not necessary.
