All hail my awesome tilapia!

I think I may have posted this before, but I’ve just made it again. Oh, boy, is it good!

½ yellow onion, coarsly chopped
1 Roma tomato, sliced, and slices cut in half
1 tbsp. crushed garlic (more or less, to taste)
1½ tsp. capers
2 tilapia fillets
Olive oil
Salt and pepper

Put some olive oil in a pan and turn on medium heat. Chop up the onion and add. Add the crushed garlic. Slice the Roma tomato and add it. Add the capers. Salt and pepper to taste. Cook until the onions are desired doneness. Add the tilapia fillets and put the veggies on top. Cook until done, turning once.

When I’ve made this before, I just ate it as is; but tonight there’s been an improvement. Tonight I made some capellini and put the fish’n’veg on top.

I think it’s a healthy meal. Cheap, too. :slight_smile:

That sounds yummy. It’s kinda making me hungry. I have a jar of capers (not sure why, but it’s there)–I’ll have to try this sometime.

Ehm - hail ? (Actually I just opened the thread to figure out what tilapia was. Sounds like either a houseplant or a skin disease…)

Hail Johnny LA’s Tilapia! I sing of it’s glory. Good for the heart is the tilapia! Great in the mouth is the tilapia!

It’s a type of fish… I find it to be a, for lack of a better term, “sweeter” and non-fishy flavored fish. Excellent with asparagus and a lemon-pepper sauce.

But Johnny’s version sounds quite good as well!

I have a really good tilapia recipe too .

Drizzle olive oil on bottom of glass baking dish . Sprinkle teaspoon od minced garlic , 1/2 teasp. dill , and dash salt. Squeeze half a lime over this, arrange 4 tilapia fillets over it , repeat over top with same ingredients . Crush 1/4 cup potato chips finely and sprinkle ovr the top . Bake at 350* till done (I probably overcook, but anyway…) Really tasty , and easy !
