I make coleslaw with horseradish and I’m not German. I also make potato salad with horseradish, despite still not being German.
Both are excellent, if I do say so myself.
I’m of German extraction, and the Keeper of the Secret Family Cole Slaw (ha!) Recipe. Traditional does not include horse radish. I modified SFCSR a few years back by adding a small amount of horseradish, about a teaspoonful per head of cabbage. It was enjoyed by all people who generally like cole slaw, or the slaw as we say it in these parts. But hell, we’ve been known to call The City, Frisco, just to piss-off the relatives who live in Pacific Heights. (Please note we were all born in SF so we get to do that, and ride the cable cars for free. Until the conductor kicks us off.)
Famous Dave’s Coleslaw has horseradish. It’s very good (although I don’t use Miracle Whip). It comes from an actual cookbook, although I have seen reviews online that suggest that the actual restaurant version has pineapple in it. The horseradish adds a nice kick.
My coleslaw recipe includes grated horseradish. Not enough so you’d think of it as a “hot” dish, but enough to add flavor and a subtle element of heat.
Horseradish doesn’t go with everything, but a lot more than you’d expect. Moms have found that stirring a little into that horribly bland Gerber strained beets really perks up Baby.
Note: Adding Miracle Whip to coleslaw is an act of perversion.
I add a little wasabi to my coleslaw, it rocks !
Depends on your dialect, mebbe. It makes sense to re-separate the Dutch words if your cuisine includes other kinds of slaw.
