I was eating at the Outback today and ordered the special fish-of-the-day called ‘amber jack.’ What the heck did I eat?

Back when I lived in Florida and dove regularly, amberjack was considered a junk fish, people would shoot it but usually wouldn’t eat it. Although some people would smoke them and eat them. Now they do, not sure what changed (maybe someone tried it and said “yum”). Also
Of course common fish names are kind of subjective and tend to change from place to place. Apparently Amberjack are sometimes also called Yellowtail, but not sure if this is the same Yellowtail which is found in sushi (which is yummy).
Anyway, Amberjack is a Carangidae which includes other Jacks and Pompanos, neither of which are considered Tuna as far as I know. (FWIW, pompano is awesome. I recommend pompano baked in parchment and covered in a light sauce, but I digress).
My folks dragged me to Destin when I was maybe 14 years old. Boring as hell, but the grilled Amberjack I had there was one of my top five meals of all time.
