An exotic food challenge

While visiting in Matehuala, Mexico and Real de Catorce, Mexico a few days ago, I ate something I think was called a gabucho. It was the pickled bud of a cactus flower ( I don’t know which cactus) and very tasty. It was about the size of the tip of my little finger. I have tried to Google it, but not had any luck. Are there any Dopers who know what I am talking about and how to purchase it?

Those are cabuches, from what’s called the biznaga cactus. I found a picture of them at the bottom of this page. I don’t know who cans them for the US market. (I just realized that site is for a restaurant in Real de Catorce.)
