If the home plate umpire can adjust for the batter’s height, surely so can the guy operating Statcast.

Sounds right, but you’ll still end up with the some randomness, although hopefully not as much as a human ump. I do think that people have a harder time disputing a computer, kind of like the ball tracking technology used for DRS in cricket (which seems to satisfy the masses). There is no human element involved in ball tracking, but there is an acknowledged error range that leads back to the original umpire’s decision if the error isn’t large enough.

The box that we current see on most baseball broadcasts is adjusted for height, and I think most people “buy into it” mentally.
