Another Sweet and Savory thread

In honor of a friend (or in an excuse based on the visit of said friend) my wife and I went to Denver Biscuit for lunch today, and I had the Lola. Weep in envy!

That is a from scratch biscuit, of epic tenderness, split, coated with in house honey butter, with a fried buttermilk chicken breast, thiiiick cut bacon, and topped with maple syrup. I had my syrup on the side to prevent immediate soggification, and as suggested in my prior post to the thread, added a heavy dash of hot sauce, but it is truly a thing of beauty. Of course, I was in a near food coma all afternoon and dinner is OUT of the question, but it was worth it.

I’ve never made chicken/waffles, but lately I’ve been making savory waffles as a side dish. I use my regular waffle recipe, but substitute the blueberries with creamed corn and diced hot peppers. Vermont Maple Syrup (from my BIL in Vermont) goes well with them.

Sounds like how I make cornbread! But I’m okay with adding diced peppers to anything, including latkes for the holidays. Then again, I grew up in southern New Mexico, and it’s almost a religion that adding peppers (good ones mind you!) is always welcome.

Overall I agree that adding some bite to breakfast goods that are getting a sweet topping is a good idea. If the waffle / pancake / etc is already super sweet, adding maple syrup or honey tends to go too far in that direction. Some extra buttermilk or even sourdoughish tang helps the contrast, as does the HEAT!

So when we make waffles at home from scratch, there are ‘normal’ buttermilk or minimal sugar waffles (just enough to aid crisping) that get topped with sweet stuff, and a second batch of ‘dessert’ waffles, that are sweetened more, but expected to be eaten out of hand after being rewarmed in the toaster.

I love eating a small pieces of chocolate while I’m eating plain old regular potato chips.

Bacon or sausage in pancake syrup.

One of my dad’s favorites was cherry chip cake (box mix) with a side of sliced pepperoni. We all laughed at him, until we tried it. It’s good.

When Covid hit, Metro Diner took my fave off the menu – Pulled Pork Mac Attack. Huge mound of pulled pork with sweet sauce next to a heaping helping of excellent mac & cheese, all on top of a (sweet) cornbread waffle (with cinnamon butter on the side)!! You didn’t need to eat again for at least 36 hours.
