Cause it sure has me and my friend stumped. Last night, we decided to experiment with a new flavor of milkshake (I’m a milkshake making version of Dr. Frankenstein). This one would be a white chocolate/strawberry milkshake. Once we got around to melting the white chocolate chips, we tried microwaving, then stove-melting, and they only got burnt, or didn’t melt the whole way. We tried it anyway, and wound up with a grainy mess. Tre disgusting.
So, I ask of you, anybody know how to melt chocolate chips? I’m talking total liquification here, otherwise it won’t work and stuff. I’m begging you guys.
Mix a little butter, a little milk and the chips together. Heat on low-medium stirring the entire time. They propably burned because you weren’t stirring. I have never been brave enough to do itthe micro, but my Mom does.
You have to be careful if you melt chocolate in the microwave. If it’s melted all the way when you take it out, it will burn, because it keeps cooking for a little while. And it holds its shape amazingly well even when melted. If you’re not dealing with chips, break the chocolate into small pieces. Nuke it in short bursts, then take it out and attempt to stir. When you can actually stir it, it’s nearly done.
Other tricks include floating a bowl with the chocolate in it in nearly boiling water.

Speaking of which, anybody got a name for a white chocolate/strawberry shake?
Absolutely - it’s the only way you don’t end up with a godawful mess. Once upon a time I lent a co-worker my double-boiler so she could make chocolate fondue. I stupidly assumed she knew how to use it (I still wonder what she thought that bottom half was for). One ruined pot later…
Sauce recipe: You can take a cup of heavy cream and add it slowly to your melted chocolate (2 cups worth). Alternatively, you can pour heated-to-boiling cream over very finely chopped chocolate and stir until the chocolate is melted. (Heat the cream to near boiling - you’ll see steam begin to come off it. But watch it closely because it can burn.)
OK, if chocolate is too boring for you I will have a choco-strawberry-banana-pineapple with fresh strawberries and pineapple. Also, I would like some of those strawberries and pineapple on the side dipped in chocolate.
You should probably throw in some whipped cream somewhere too!!
Make sure that no water- not even ONE drop, gets into the chocolate while you are melting it, or it will go grainy in a matter of seconds.
I also use a double boiler when I melt chocolate for molding candy, but I fill the bottom of the boiler with hot tap water, and melt the chocolate over that. It takes about 20 minutes to melt it this way, but the finished product has a much nicer consistency. Also, it’s impossible to burn the stuff using this method.
You have to put it in your pocket “just for a minute” and then find it a few hours later. Lighter clothing works better, a perfect containter would be white jeans, the first time you wear them, and if possible, sit on a white or off-white couch or carseat during this process.
