I had some excellent soft gingerbread cookies today and feel like baking some.
I don’t have a good recipe though. I thought I’d ask here. I am looking for soft gingerbread cookies. I guess even a ginger loaf would be good, as long as it was not too dense

Don’t mean to bump my own thread, but if anyone has a recipe which includes molasses it’d be a bonus. I love molasses. 
Here’s the recipe I used to make these cookies for my husband and daughter this past Christmas season. They’ve decided they like these more than even Toll House cookies, and I thought that would never happen.
Soft Gingersnaps
2 1/4 C. AP Flour
1/4 tsp. Salt
1 tsp. Baking Soda
2 tsp. Ginger
2 tsp. Cinnamon
1/2 tsp. Cloves
3/4 stick Butter
1 C. Brown Sugar - firmly packed
1 Egg
1/4 C. Molasses
- Preheat oven to 350 degrees.
- Sift together the dry ingredients, and set aside.
- In another bowl, beat the butter and brown sugar until smooth.
- Add egg and molasses, and beat until smooth.
- Gradually add the dry ingredients to the sugar/molasses mixture. Mix until combined.
- Use 1 tsp. dough per cookie, and roll the dough into balls.
- Place on a parchment-lined cookie sheet, 2" apart.
- Bake for 8 to 10 minutes.
*** You can roll the dough balls in colored sugar before baking, if desired.*
Disappearing Gingerbread
1 1/2 sticks butter
1 2/3 cup sugar
zest of one orange
4 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tbsp ginger
1/2 tsp nutmeg
1/2 tsp allspice
2 tsp cinnamon
1/4 tsp cloves
1/2 tsp salt
2 eggs
1/2 cup dark molasses
juice of one lemon
Whisk last three items together before adding. Divide dough and chill 15 minutes. Bake at 350 for…well, you know your oven and your palate. Start with 10 minutes and go from there.
Frosting:
1 cup powdered sugar
zest of one orange
1 to 2 tbsp OJ
1/2 tsp orange liqueur
1/4 tsp light corn syrup (Yes, teaspoon. :dubious: but it works.)
