New Years is the time for appetizers. I am looking for various recipes. I need on for the ham and cheese rollups so common in the midwest and decent crab puffs, which are rare.
Crab stuffed mushrooms
Take several large fresh white mushrooms wash and remove the stems. Save the stems.
Stuffing
1/3 cup Seasoned Bread crumbs
2 Tablespoons dry White Wine
1 teaspoon dry mustard
1/4 tespoon white pepper
1 medium clove garlic, minced
1 tablespoon minced fresh chives
12 ounces of crab meat ( I stem and pick crabs until I have enough, any extra goes into crab dip. Don’t blame me if you use crabuluxe or Krab)
Mix together the mustard, pepper and wine. In a separate bowl, mix together the other ingreadients. Pour the wine mixture over the other ingredients and stir until everthing is slightly moist. Stuff mushrooms, Broil for a few minutes until they are a bit browned.
Get a cube of goat cheese (the soft kind), put it on a plate, cover it liberally with coarsely ground black pepper and then dump a jar of Ginger Marmalade over the top. Serve with Triscuits.
Okay, are you talking about those ham and cheese roll ups that are made with flour tortillas and come out looking like little pinwheels?
Also, I don’t have a crab puff recipe, but I have a pretty nifty crab tartlet recipe:
Crab Tartlets
Makes about 3 dozen
You’ll need a mini-muffin pan
2 Sheets Puff Pastry (defrost, if frozen, in fridge )
3-4 T. Flour - for dusting the puff pastry
1# Crab Meat (canned is fine if you’re in a hurry)
2 cups Gouda Cheese - Shredded
4 T. Thyme - Fresh (reserve 1 T. for garnish)
1 cup Mayonnaise
Salt and fresh ground Pepper to taste
1 large (both halves) Shallot - finely chopped
4 cloves Garlic - finely chopped (I use a food processor with both the shallots and garlic to make it almost a grainy paste texture)
2 T. Butter
2 oz White wine (dry)
Preheat oven to 400degrees F.
Preparation:
Roll out puff pastry, and using a 3" biscuit cutter, make 36 rounds
(about 18 from each sheet). Place over mini-muffin cups, and tamp down.
In a large bowl, combine the crab meat, cheese, thyme and mayonnaise.
In a medium pan, sauté the shallots and garlic in the butter for a couple minutes.
Add the wine and cook another minute or two.
Add the shallots/garlic mixture to the crab mixture.
Fill the pastry cups (a small scoop works well). Garnish with the reserved thyme.
Bake 20-25 minutes at 400d.F. until the pastry browns and the cheese starts to bubble. Serve warm.

Ham and asparagus rollups
Cook fresh asparagus to desired doneness. (I think somewhat tender works better than crunchy here.) Spread cream cheese on a slice of ham (the rectaungular luncheon meat kind). Roll up a spear of asparagus in the cream chease smeared ham. Slice into bite-sized pieces.
Ukulele Lady came up with these on Xmas Eve, because we had all the ingredients on hand. A little weird-sounding (avocado and LOX?), but they were great.
Cut a wholegrain baguette into rounds, and toast lightly in the oven. Spread each with some mashed, very ripe avocado, add a scallion cut to fit the toast, and split lengthwise (for the pretty julienne effect). Top with a piece of smoked salmon.
