We have this tree in our yard. In years past, it has had pretty flowers in May and that’s all. This year… apricots! Very exciting. I have already made some jam and might make more. What other awesome recipes can I make with these apricots? I don’t know jack about drying them out, is it easy? I would be interested in dessert recipes or just about anything vegetarian-- my husband has this weird dislike against mixing fruit with meat.
I’ve never made it with fresh apricots - but what about a apriocot glazed chicken or pork loin?
Fruit Crumble (in this case apricot)
Quantities don’t matter just use enough to fill whatever you are baking in.
Turn oven on to heat to about 300- 320 F
- fresh fruit
- castor sugar and/or honey
- plain flour/crushed favourite breakfast cereal/rolled oats/crushed biscuits/shredded coconut/crushed nuts(almonds, hazelnuts, pistachioes)
- brown sugar/crushed nut brittle/caramel
- allspice/cinnamon/nutmeg
- soft unsalted butter (leave it out all day)
Enough of 1 to make one or two layers in the bottom of the say deep pie dish.
Drizzle over any combination of 2 to lightly coat.
Mix together any combination of 3, 4 and 5 that you fancy (I’d go for flour, a little oats, coconut and some nuts - a couple of cups say in total. Plus 1/2 cup sugar and a teaspoon of cinnamon/allspice)
Rub enough butter, by hand into the dry ingredients until they resemble bread crumbs.
Spread over the fruit. Make more if you didn’t make enough. Doesn’t matter if you made too much it’s just thicker.
Bake for 20+ minutes until golden brown.
Serve with cream/ice cream/yoghurt/custard or any combination of them.
Works with any fruit and you just change the composition of the crumble topping to suit your tastes. For example I made a pear crumble recently and added crushed choc chip cookies to the flour because chocolate and pears together seemed appealing. I am going to try it next with strawberries.
