The biggest and most worrisome health risk that comes with the loss of legs that doesn’t happen with the loss of arms or eyes is the increased risk of pressure ulcers. Horrible, horrible things that can lead to infection and death.
…But I’m still going to pick legs. I’m going to have excellent nutrition and follow all the rules to minimize the risk of pressure ulcers, but I won’t willingly give up hugging my kids, or typing to you crazy people, or being able to brush my own hair.
And eyes? shudder Stuff of my nightmares, blindness is.
I’m already mostly blind, and slowly losing what’s left of my sight. I’ll give up my legs (and intercourse, as long as I can still do other stuff with my wife) if I can have working eyes back. 
I have a friend who lost one arm at the shoulder from necrotizing fasciitis. Losing an arm sucks. Losing two would be extremely difficult.
Yep, I’m going with the legs.
I evidently should’ve gone blind when I was much younger.
