I’m looking for recipes for yummy baked goods that can stand up to being mailed. (Domestic, priority mail, well-wrapped and properly packed, of course.)
I have a wonderful brownie recipe that I will be using, but I’d like to find a few other things, perhaps some bar cookies (anyone have experience with shipping lemon bars?) or blondies or cookies slightly less ubiquitous than chocolate chip.
Anyone have anything tried and true that you’ve made and sent in a care package or a far flung friend that you’re willing to share?
These are my go-to mailing treat when I send stuff to my friend across the country: Cherry Pistachio Oatmeal Bars.
I use almonds instead of pistachios, though, Earth Balance instead of butter, and soy yogurt in place of the egg to make them vegan. Not that I’m saying that you should, but just to let you know I’ve never exactly followed the recipe. I’m assuming they would ship well the regular way, too. I just wrap mine tightly in aluminum foil and them seal them in tupperware and have never had a problem.
I think blondies would also be great for shipping! And very tasty. I don’t know if lemon bars would work unless they could be packed very tightly together as most of them seem pretty delicate/creamy to me.
They’re not baked, but Rice Crispies Treats will ship well.
Among baked goods: sweet breads, like banana bread, pumpkin bread, etc.
