Because beef and cheese are governed by the FDA, whereas beans are controlled by the Agriculture Department. In December 1977 a congressional committee was convened to decide which department would be in charge of examining a bean, beaf and cheese burrito. After much expert testimony Frank Church, the well-known senator from Idaho, and a staunch defender of the flag and the union for which it stands, stood forth and delivered an impassioned plea to stop the hearing so congressmen could go home to celebrate the holidays. The matter was shelved and has remained so ever since.

Recipe By : Real Food for Real People
Serving Size : 24 Preparation Time :0:00

Amount Measure Ingredient – Preparation Method


2 tablespoons Vegetable Oil
1 large Onion – chopped
3 cloves Garlic – minced
2 pounds Ground Beef, extra lean
1 tablespoon Chili Powder – (or to taste)
2 cups Monterey Jack Cheese – shredded
Salt and pepper – to taste
8 ounces Tomato Sauce
3 cups Refried Beans
24 large Flour Tortillas

Saute onion in oil until tender. Add ground beef and garlic. Cook until beef is browned. Drain well. Add chili powder as well as salt and pepper to taste. Stir in tomato sauce and simmer 5 minutes. Add refried beans and cook until warmed through. Set aside. Soften tortillas, according to package instructions, and place about 1/4 to 1/3 cup of meat mixture and some cheese onto center of each. Roll up, tucking sides in as you roll. Eat while warm or freeze according to directions below.

To freeze: Wrap each burrito in a paper towel, and place burritos onto a cookie sheet and flash freeze until solid. Place frozen burritos into a large container or zip baggie, or place each individual burrito into a zip baggie for single servings, and return to freezer. Label and use within 6 months.

Per serving: 408 Calories (kcal); 16g Total Fat; (35% calories from fat); 18g Protein; 47g Carbohydrate; 34mg Cholesterol; 614mg Sodium; 4g Fiber"

The recipe sounds pretty good, actually, given that my husband loves those frozen burritoes and likes to have them on hand. But “flash freeze until solid”? How do I flash freeze?

Flash freezing is great for things that you might only want a little of at a time. I did this for strawberries last season. Now, I can take out sliced strawberries to use in my “sweet” breads, cereals, and the like. I also used it for the field peas out of the garden.
