Ack. Of course that should be Chocolate Lava Muffins.
teela brown’s Mocha Almond Gelato (this assumes you have an ice cream freezer)
To make 4 pints of ice cream:
3 cups cream
1 cup milk
3/4 cup sugar
pinch salt
4 egg yolks
2 ounces bittersweet chocolate
2 teaspoons of espresso powder
few drops of vanilla extract
1 teaspoon of almond extract
Put the cream, milk, sugar and salt into a large saucepan and put it on to heat over a high heat. While it’s heating, chop the chocolate and put the egg yolks into a large bowl and beat them for several seconds.
When the cream mixture comes to a boil, remove it from the heat, and ladle a little of the hot mixture into the beaten eggs, whisking, to bring the temperature of the eggs up. Gradually ladle and whisk about a cup of the cream mixture into the eggs. Pour the egg mixture back into the saucepan and put the pan over a low to medium heat for several seconds or a minute, stirring. It’s ready when you see wisps of steam coming from the surface, or if you can draw your finger through the mixture on the back of a spoon and it leaves a clean streak. Don’t let it come to a boil, though; the yolks will thicken the mixture enough before even a simmer is reached. Boiling will scramble the yolks.
Remove the pan from the heat and add the vanilla and almond extracts, the chopped chocolate and the espresso powder. Let it sit a couple of minutes to melt the chocolate, then whisk to blend. Chill this mixture for four hours in the fridge, and then freeze it in your ice cream freezer.
This is one of signature recipes…my “claim to fame” if you will among family, friends, and co-workers. I will happily share it with my fellow dopers but I am not responsible for injury due to fainting, chocolate-induced coma/orgasms, or any unsolicited proposals of marriage.
Kahlua Fantasy Chocolate Cheesecake

Ingredients:
-----CHOCOLATE CRUMB CRUST-----
1 1/3 cups Chocolate wafer crumbs
1/4 cup Softened butter
1 tablespoon Granulated sugar
-----CHEESECAKE-----
1 1/2 cups Semi-sweet choc. pieces
1/4 cup Kahlua
2 tablespoons Butter
2 Lg. eggs, beaten
1/3 cup Granulated sugar
1/4 teaspoon Salt
1 cup Sour cream
2 8 oz. pkgs. cream cheese*
Directions:
*Soften cream cheese, and cut in pieces. Prepare chocolate crumb crust and press firmly in a 9" springform pan. Preheat oven to 350 deg… In a small saucepan, over med. heat, melt choc. with Kahlua and butter. Stir until smooth. Set aside. In bowl, combine eggs, sugar and salt. Add sour cream; blend well. Add cream cheese to egg mixture; beat until smooth. Gradually blend in choc. mixture. Turn into prepared crust. Bake 35 min. or until filling is barely set in center. Turn off heat, and let stand in oven for 15 min. with door open. Then take out of oven and let stand at room temp. 1 hr. Refrigerate several hrs. or overnight. You can garnish with whipped cream and choc. shavings.
