Can’t read the page referencing horse statues, but IIRC the statue of Edward VII in the middle of Queens Park in Toronto has the front left hoof raised and I don’t recall anything about Eddy’s war wounds.

It is quite possible that after that myth was promulgated, some artists felt they had to follow it.
