Bread in a can? What is this thing?

Modernist Cuisine made an excellent case that canned fruits and vegetables are actually fresher than “fresh” ones that have been trucked across the country. They are canned within hours, sometimes only minutes, of being picked and it basically stops the decomposition that otherwise happens to them.

Another factor is that fruit and vegetables that are going to be processed close to their fields don’t have to be bred for traits that allow long transportation and shelf lives.

Yes, thank you. The intensely flavorful strawberries from a can used in CostCo’s “Very Berry Sundae” are so superior to the allegedly “fresh” strawberries available for purchase back in the produce department that the latter may as well be potatoes.

How big is the squash-or-pumpkin? I put mine in a plastic grocery bag, hold it over my head in the garage, and let it drop on the cement floor. Cracks it open some.

Oh, the foods of my Boston childhood. Not only brown bread in a can, but Friday night suppers of fish sticks, baked beans, and O&C potato sticks in a can. And we each got our own can.
