What is the white coating on the outside of brie?
It’s an edible white mold rind. Just don’t think about it, and enjoy the taste!

Thanks, mnemosyne. That’s what I thought it was. (And no worries: I always eat it.)
[sub]I have some very nice bleu cheese in the fridge right now with an enormous amount of blue mold in it. Yum! [/sub]
I consider the rind on Brie and Camenbert to be the best part.
Thank you mnemosyne. I was taught not to eat it, but I seem to lose so much cheese by cutting it off.
