Can I enjoy the new Star Wars movie if I haven't seen all of the other ones?

You’ll be fine. It really doesn’t need much background knowledge at all.

You can watch it without seeing any of the others, but you will get lot more of the references* if you watch episodes 4-6 (A new hope; Empire strikes back; Return of the Jedi.)
